The profile of Skye Beef fed on draff from local whisky distilleries is to be boosted this November when it is showcased at two major events. On the 12th of November The Farm Advisory Service (FAS) is holding ‘Skye Beef 2019’ at the Sligachan Hotel when crofters and farmers will be briefed on the advantages of feeding draff to suckler cows and beef cattle. At the event, catering students from West Highland College will find out the results of a competition sponsored by SAC Consulting and SkyeConnect, to design a dish using Skye Beef. The winning recipe will be served to diners at the SkyeConnect Autumn Conference – ‘Skye the Experience’ at the Sligachan Hotel on the 18th of November. One of the competition judges is Calum Montgomery, Chef Patron of Edinbane Lodge, who explains in this short video what he will be looking for in the winning recipe.
